Isn’t green the prettiest?! This gluten and dairy free Green Pancakes recipe are one of my “old but gold” creations. I don’t think there is something more greener and delicious than that. Here’s a look at how you can makes some tasty green pancakes
Ingredients to Make Green Pancakes:
5 kale leaves chopped
1 cup buckwheat flour (it can be replaced for other wholemeal flour or oats)
1 cup plant-based milk
2 eggs (*or flax eggs)
1 tsp baking powder
Salt and pepper to taste.
How to Make Your Green Pancakes:
- Blend all the ingredients together in a blend until smooth. Heat a pan with a dash of coconut oil or olive oil on medium heat.
- Pour ¼ cup of batter into the pan and cook until bubbles start to form. Flip to the other side and cook for another 2 minutes.
- *For a vegan version, replace the eggs with “flax eggs”: 1 tbsp flaxseed meal + 3 tbsp water.
- Mix the ingredients in a bowl. Let the mixture to rest for 5 minutes to thicken. This mixture will replace 1 egg.
Top your green pancakes with avocado, yogurts, humus or nut butter and enjoy!
